Ingredients
- 500g fresh broccoli, chopped
- 200g thawed japanese scallops
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable or chicken stock
- 1 cup cream or milk (for a lighter option)
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp lemon juice (optional, for garnish)
- Fresh herbs (such as parsley or chives), for garnish
Method
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until softened, about 5 minutes.
- Add the chopped broccoli to the pot and cook for an additional 2 minutes. Pour in the vegetable or chicken stock, bring to a simmer, and cook for 10-15 minutes, or until the broccoli is tender.
- Using an immersion blender or a regular blender, blend the soup until smooth and creamy. Return to the heat and stir in the cream or milk. Season with salt and pepper to taste.
- While the soup is heating, season the scallops with salt and pepper. Heat a small amount of olive oil in a separate pan over high heat and sear the scallops for about 1-2 minutes on each side until golden brown and cooked through.
- Serve the soup in bowls, topping each with a few seared scallops. Garnish with fresh herbs and a squeeze of lemon juice, if desired. Serve immediately.
