Steps
- Heat the oil in a non-stick frying pan over medium-high heat. Sprinkle the fish with salt and pepper. Add the fish to the pan. Cook for 2-3 minutes on each side or until just cooked through. Remove from the pan, cover with foil, and set aside to keep warm.
- Wipe the frying pan with paper towel and return to medium heat. Add the butter and cook for 1-2 minutes or until it starts to turn golden brown. Add the garlic and oregano. Cook for another 30 seconds, then remove from the heat. Add the lemon juice and stir to combine.
- Divide the fish between serving plates and drizzle with the lemon and oregano sauce. Serve with a wedge of lemon and a simple salad.
