Ingredients

  • 1 tbsp extra virgin olive oil, plus extra to serve
  • 1 leek, thinly sliced
  • 1 fennel bulb, trimmed and thinly sliced
  • 3 garlic cloves, thinly sliced
  • 1 long fresh red chilli, deseeded and thinly sliced
  • 125ml (1/2 cup) dry white wine
  • 320g mixed cherry tomatoes, halved
  • 55g (1/3 cup) pitted kalamata olives
  • 500g barramundi
  • 125ml (1/2 cup) salt-reduced chicken or fish stock
  • 2 tbsp chopped fresh continental parsley
  • 4 slices wholegrain sourdough bread, toasted, to serve

Steps

  1. Heat the olive oil in a large frying pan over medium heat. Add the leek and fennel, and cook, stirring for about 5 minutes, or until softened. Add the garlic and chilli, and cook for an additional minute, or until aromatic.
  2. Pour in the dry white wine and bring to a simmer. Let it simmer uncovered for 1-2 minutes. Add the cherry tomatoes and olives, and continue to simmer uncovered for another 2 minutes.
  3. Add the barramundi, stock, and 200ml of water to the pan. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 8-10 minutes, or until the fish is cooked through. Season to taste and sprinkle with chopped parsley before serving with toasted wholegrain sourdough.
