Ingredients List

  1. 150 g tasmanian scallops, thinly sliced
  2. 1/4 cup fresh lime juice (about 2 limes)
  3. 1 tablespoon good-quality tequila
  4. 1/4 small red onion, finely sliced
  5. 1/2 small red chilli, finely chopped (adjust to taste)
  6. 1 tablespoon fresh coriander, chopped
  7. Salt, to taste
  8. Tortilla chips or crispy tostadas, to serve

Steps

  1. In a glass or ceramic bowl, combine the thinly sliced scallops with fresh lime juice and tequila. Stir gently to coat the scallops and allow them to marinate for 20-30 minutes, or until the scallops turn opaque and cook in the citrus juice.
  2. While the scallops are marinating, prepare the other ingredients. Finely chop the red onion, cucumber, chilies (if using), and cilantro. Dice the avocado (if desired) and set everything aside.
