Ingredients

  1. 6 scallops, cleaned and patted dry
  2. 1 cup baby Asian greens
  3. 1 tablespoon sweet chilli sauce
  4. 1 tablespoon lemon juice
  5. 1 teaspoon soy sauce
  6. 1 teaspoon vegetable oil or cooking spray
  7. Fresh lime wedges, to serve

Method

  1. To make the chilli dressing, combine the sweet chilli sauce, lemon juice, and soy sauce in a small jug. Cover with plastic wrap and place in the fridge until required.
  2. Lightly spray a large non-stick frying pan with canola oil cooking spray and heat over medium-high heat. Add the scallops and cook for 1 minute on each side for medium, or until cooked to your liking. Drizzle
    with 2 tablespoons of the chilli dressing and cook for a further 1 minute or until brown.
  3. Divide the Asian greens between bowls. Add scallops, drizzle with remaining dressing, and gently toss to combine.
