Ingredients

  1. 500gm frozen pineapple-cut squid (defrosted)
  2. 1/2 cup all-purpose flour (for coating)
  3. 1/4 cup cornstarch (for extra crispiness)
  4. 1/2 teaspoon salt
  5. 1/2 teaspoon black pepper
  6. 1/4 teaspoon garlic powder
  7. 1/4 teaspoon paprika (optional, for extra flavor)
  8. Vegetable oil (for frying)
  9. Lemon wedges (for serving)

Method

  1. Defrost the squid: If using frozen pineapple-cut squid, allow it to defrost completely. Pat dry with paper towels to remove excess moisture.
  2. Prepare the coating: In a shallow bowl, combine the all-purpose flour, cornstarch, salt, pepper, garlic powder, and paprika (if using). Mix well.
  3. Coat the squid: Dip each piece of squid into the flour mixture, ensuring it’s evenly coated on all sides.
  4. Heat the oil: In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches about 350°F (175°C).
  5. Fry the squid: Carefully add the coated squid to the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy. Avoid overcrowding the pan to ensure even frying.
  6. Drain excess oil: Remove the fried squid from the oil and place it on a plate lined with paper towels to drain any excess oil.
  7. Serve: Plate the crispy Salt & Pepper Squid and serve with lemon wedges on the side. Enjoy immediately for the best taste!

Chef's Tip

Salt and pepper squid is all about contrast — a light, crispy coating wrapped around tender, delicate calamari. Using a simple seasoned flour keeps the texture crisp without overpowering the seafood, while quick frying at high heat locks in flavour and prevents the squid from becoming tough. Fresh lemon adds brightness and balance, creating a classic seafood dish that’s crunchy, savoury, and incredibly moreish.
