Ingredients List

  1. 400 g squid, cleaned and sliced into rings
  2. 1/2 cup plain flour
  3. 1 teaspoon sea salt
  4. 1 teaspoon freshly ground black pepper
  5. vegetable oil, for deep frying
  6. lemon wedges, to serve
  7. dipping sauce of choice (optional)
  8. salad greens, to serve (optional)

Steps

  1. Place the flour, pepper, and salt in a resealable plastic bag. Add the squid rings and seal the bag tightly.
  2. Shake the bag until the squid is evenly coated in the flour mixture. Set aside while preparing the cooking pan.
  3. Heat the vegetable oil in a large, non-stick frying pan over high heat. Add the squid and cook, turning occasionally, for 2-3 minutes or until golden brown and just cooked through. Remove and place on a plate lined with paper towel to drain excess oil.
  4. Arrange the baby Asian greens on serving plates and top with the salt and pepper squid. Serve immediately.
