Ingredients List

  1. 4 salmon fillets, skin removed
  2. 500g potatoes, peeled
  3. 1 tablespoon butter
  4. 1/2 cup breadcrumbs
  5. 500g salmon mince
  6. 3 green onions, chopped
  7. Zest and juice of 1 lemon
  8. 1 egg
  9. 1/4 cup plain flour
  10. Vegetable oil for frying
  11. 1 cup mayonnaise
  12. 2 tablespoons sour cream
  13. 2 tablespoons capers, chopped
  14. 1 tablespoon fresh dill, chopped

Steps

  1. In a saucepan of boiling water, cook the potatoes for 15-20 minutes or until tender. Drain well and mash with butter until nearly smooth. Season to taste.
  2. Add the breadcrumbs, salmon mince, green onions, lemon zest and juice, and the egg to the potato mixture. Mix thoroughly and allow to cool slightly. Shape into 8 oval patties and roll in flour, shaking off
    the excess.
  3. Heat oil in a large frying pan over high heat. Cook the patties in two batches for 5-6 minutes, turning once, until golden and heated through. Drain on paper towels.
  4. To prepare the caper mayonnaise, combine mayonnaise, sour cream, capers, and a pinch of chopped dill. Set aside.
  5. Serve the salmon patties with the caper mayonnaise, accompanied by a fresh salad.
