Ingredients

  1. 2 tbsp olive oil
  2. 1 tbsp butter
  3. 1 medium onion, finely chopped
  4. 2 garlic cloves, minced
  5. 2 medium potatoes, peeled and diced
  6. 1 tsp smoked paprika
  7. ½ tsp dried thyme
  8. 500ml chicken or seafood stock
  9. 1 cup milk
  10. 1 cup thickened cream
  11. 300g prawns, peeled and deveined
  12. 1½ cups corn kernels (fresh or frozen)
  13. Salt and pepper, to taste
  14. 2 tbsp chopped fresh parsley, for garnish
  15. Crusty bread, to serve (optional)

Method

  1. Heat olive oil and butter in a large pot over medium heat. Add the chopped onion and garlic, cooking for 3-4 minutes until softened and fragrant.
  2. Add the diced potatoes and cook for another 5 minutes, stirring occasionally. This helps to soften the potatoes before adding the liquids.
  3. Pour in the chicken or vegetable stock and bring the mixture to a boil. Reduce the heat and simmer for 10-15 minutes, or until the potatoes are tender.
  4. Stir in the corn kernels and cook for an additional 5 minutes, allowing the corn to heat through.
  5. Add the prawn meat to the pot, stirring gently to combine. Cook for 2-3 minutes, or until the prawn meat is cooked through and turns opaque.
  6. Stir in the cream or milk, paprika, salt, and pepper. Simmer for an additional 3-5 minutes, making sure everything is heated evenly.
  7. Optional: Add lemon juice for extra brightness. Taste and adjust seasoning if necessary.
