Ingredients List
200g fresh whitebait (cleaned)
100g plain flour
50g rice flour
Salt (to taste)
Pepper (to taste)
1 teaspoon paprika (optional)
1 egg (beaten)
100ml cold water
Vegetable oil (for frying)
Fresh parsley (for garnish)
Lemon wedges (for serving)
Steps
In a bowl, mix the plain flour, rice flour, salt, pepper, and paprika (if using).
In a separate bowl, whisk together the beaten egg and cold water to make a batter.
Dip the cleaned whitebait into the batter, ensuring they are evenly coated.
Heat vegetable oil in a frying pan over medium-high heat. Test the oil by dropping in a small amount of batter – it should sizzle immediately.
Carefully add the battered whitebait to the hot oil in batches, frying for 2-3 minutes or until golden and crispy. Avoid overcrowding the pan.
Using a slotted spoon, remove the fried whitebait and drain on paper towels.
Serve the fried whitebait hot, garnished with fresh parsley and lemon wedges on the side.
