Ingredients List

  1. 2 tablespoons butter
  2. 1 onion, chopped
  3. 4 medium potatoes, diced
  4. 4-6 slices of bacon or 2 small ribs (for added flavor)
  5. 3 cups milk
  6. 2 cups vegetable or chicken stock
  7. 1 cup heavy cream
  8. 2 cloves garlic, minced
  9. 500g fresh clams, cleaned and chopped
  10. 1/4 cup fresh parsley, chopped
  11. Salt and pepper to taste

Steps

  1. Melt butter in a large pan over medium heat. Add onion and cook until soft.
  2. Add potatoes and bacon or ribs. The bones will add extra flavour.
  3. Cook, stirring over low heat for about 30 minutes until golden.
  4. Stir in milk, stock, cream, garlic and clams. Simmer gently for 10 minutes. Stir in parsley. Season with pepper. Serve.
