Ingredients

  1. 800g baby octopus, cleaned and prepared
  2. 2 tbsp vegetable oil
  3. 3 cloves garlic, minced
  4. 1 red chilli, finely sliced (adjust to taste)
  5. 1 thumb-sized piece of ginger, grated
  6. 1 bunch broccolini, trimmed and halved
  7. 2 tbsp soy sauce
  8. 1 tbsp oyster sauce
  9. 1 tsp sesame oil
  10. 1 tsp sugar
  11. Juice of ½ lime
  12. Spring onions, sliced (for garnish)
  13. Sesame seeds (optional, for garnish)

Method

  1. Prepare the baby octopus by using a sharp knife to separate the heads from the tentacles, just below the eyes. Remove and discard the eyes, then halve the tentacles.
  2. Heat oil in a wok or large frying pan over high heat. Stir-fry half the octopus for 2-3 minutes until just cooked, then transfer to a plate. Repeat with the remaining octopus, reheating the pan between batches as needed.
  3. Add garlic, chilli, and ginger to the pan and stir-fry for 1 minute until fragrant. Stir in the broccolini and cook for 2 minutes until tender. Mix in the tomato sauce, sweet chilli sauce, and sugar, and stir-fry for 2-3 minutes until the sauce thickens and boils. Return the octopus to the pan and stir-fry for 1 minute to heat through.
  4. Divide steamed rice among serving bowls and spoon the octopus stir-fry on top. Serve immediately and enjoy.
