Ingredients List

  1. 1 tablespoon olive oil
  2. 1/2 small onion, chopped
  3. 1 garlic clove, minced
  4. 250 g broccoli, chopped
  5. 500 ml vegetable or chicken stock
  6. 2 tablespoons cream (optional, for extra richness)
  7. Salt and pepper, to taste
  8. 8 scallops, cleaned and patted dry
  9. 1 teaspoon olive oil (for searing scallops)
  10. Fresh herbs (like parsley or chives), to garnish (optional)

Steps

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until softened, about 5 minutes.
  2. Add the chopped broccoli to the pot and cook for an additional 2 minutes. Pour in the vegetable or chicken stock, bring to a simmer, and cook for 10-15 minutes, or until the broccoli is tender.
  3. Using an immersion blender or a regular blender, blend the soup until smooth and creamy. Return to the heat and stir in the cream or milk. Season with salt and pepper to taste.
  4. While the soup is heating, season the scallops with salt and pepper. Heat a small amount of olive oil in a separate pan over high heat and sear the scallops for about 1-2 minutes on each side until golden brown and cooked through.
  5. Serve the soup in bowls, topping each with a few seared scallops. Garnish with fresh herbs and a squeeze of lemon juice, if desired. Serve immediately.
