Steps

1. Prepare the salt and pepper squid by patting it dry with paper towels if using fresh. If using pre-made, cook according to package instructions and set aside.
2. Heat the vegetable oil in a large wok or skillet over medium-high heat until hot.
3. Add the minced garlic, sliced chillies, and shallots to the wok. Stir-fry for 1-2 minutes until fragrant and slightly softened.
4. Increase the heat to high and add the cooked salt and pepper squid to the wok. Toss everything together for about 1 minute.
5. Stir in the soy sauce, oyster sauce, sesame oil, and sugar. Mix well to coat the squid evenly with the sauces.
6. Continue stir-frying for another 2-3 minutes, ensuring the squid is heated through and the flavours are combined.
7. Remove the wok from heat and garnish the dish with freshly chopped coriander leaves.
