  • 500g prawn meat, cooked and chopped
  • 1 cup cooked jasmine rice, cooled
  • 1 lime, juiced and zested
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh coriander, chopped
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Salt and pepper to taste
  • 1 avocado, sliced (optional, for garnish)

Steps

  1. In a large mixing bowl, combine the cooked and cooled jasmine rice with the chopped prawn meat. If the prawns are not pre-cooked, sauté them in a hot pan with a little oil for 2-3 minutes until pink and cooked through.
