Ingredients

  1. 200g tuna saku block
  2. 1 tbsp sesame oil
  3. 1 tbsp soy sauce
  4. 1 tsp rice vinegar
  5. 1 tsp mirin (optional)
  6. Toasted sesame seeds, for coating
  7. 2 tbsp ponzu sauce, for dipping
  8. Spring onions, finely sliced, for garnish
  9. Grated daikon or pickled ginger, to serve (optional)

Method

  1. First, heat a non-stick skillet or frying pan over medium-high heat. Add sesame oil and let it heat up until shimmering, but not smoking.
  2. While the pan heats up, season the tuna with soy sauce, rice vinegar, and mirin (if using). Coat the tuna evenly with the seasoning mixture.
  3. Once the pan is hot, place the tuna in the pan for about 30-45 seconds on each side to sear the outside, leaving the inside raw. Remove from heat.
  4. Allow the tuna to rest for a minute before slicing it into thin pieces, about 1/4 inch thick, using a sharp knife.
