Ingredients List

  1. 200g smoked salmon, flaked
  2. 1 ripe avocado, chopped
  3. 1/4 red onion, finely chopped
  4. 1/4 cucumber, finely chopped
  5. 1 tablespoon lemon juice
  6. 1 tablespoon fresh chives, chopped
  7. 12 wonton wrappers
  8. Vegetable oil (for frying)

Steps

  1. Heat vegetable oil in a shallow frying pan over medium heat.
  2. Quarter the wonton wrappers and fry them in batches for 1-2 minutes until golden and crispy. Drain on paper towels.
  3. In a bowl, combine the flaked smoked salmon, chopped avocado, red onion, cucumber, lemon juice, and chopped chives. Mix gently to combine.
  4. Place a small spoonful of the salmon and avocado mixture onto each fried wonton wrapper quarter.
  5. Arrange the wonton bites on a serving platter and serve immediately.
