Ingredients List

  1. 400g fresh silver fish
  2. 2 tablespoons vegetable oil
  3. 1 large onion (chopped)
  4. 2 cloves garlic (minced)
  5. 1-inch piece fresh ginger (grated)
  6. 2 teaspoons curry powder
  7. 1 teaspoon turmeric powder
  8. 1 teaspoon cumin powder
  9. 400 ml coconut milk
  10. 200 ml water (or fish stock)
  11. 1-2 tablespoons fish sauce (to taste)
  12. Salt (to taste)
  13. 2 green chilies (optional, sliced)
  14. Fresh coriander (for garnish)
  15. Lemon wedges (for serving)
  16. Rice or bread (for serving)

Steps

  1. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened and lightly golden.
  2. Add the minced garlic and grated ginger to the pan. Cook for another minute until fragrant.
  3. Stir in the curry powder, turmeric powder, and cumin powder, and cook for another minute to toast the spices.
  4. Pour in the coconut milk and water (or fish stock), then bring the mixture to a simmer. Let it cook for 5-7 minutes to thicken slightly.
  5. Add the silver fish pieces to the curry sauce and gently stir to coat. Cook for 6-8 minutes, or until the fish is cooked through and flakes easily.
  6. Season with fish sauce and salt to taste. If desired, add sliced green chilies for extra heat.
  7. Garnish with fresh coriander and serve with lemon wedges on the side. Serve the curry with rice or bread.
