- Fresh oysters in the half shell – 6 to 8 oysters, cleaned
- ¼ cup champagne or sparkling white wine
- 1 small shallot, finely chopped
- ¼ cup thickened cream
- White pepper, to taste
- Salt, to taste (optional)
- Fresh chives or parsley, finely chopped (for garnish)
- Rock salt or crushed ice (for serving)

- In a saucepan over medium heat, combine the champagne and finely chopped shallot. Bring to a boil, then reduce the heat to medium-low and simmer for 3-5 minutes, or until reduced by half.
