Ingredients List

  1. Fresh oysters in the half shell – 6 to 8 oysters, cleaned
  2. ¼ cup champagne or sparkling white wine
  3. 1 small shallot, finely chopped
  4. ¼ cup thickened cream
  5. White pepper, to taste
  6. Salt, to taste (optional)
  7. Fresh chives or parsley, finely chopped (for garnish)
  8. Rock salt or crushed ice (for serving)

Steps

  1. In a saucepan over medium heat, combine the champagne and finely chopped shallot. Bring to a boil, then reduce the heat to medium-low and simmer for 3-5 minutes, or until reduced by half. Stir in the thickened cream and season with freshly ground white pepper. Simmer for an additional 3-4 minutes, or until the sauce thickens and reduces by half.
  2. Preheat the grill on high. Scatter rock salt over the base of 2 small heatproof serving dishes and arrange the oysters on top of the rock salt. Evenly pour the cream mixture over the oysters. Cook under the grill for 1-2 minutes, or until golden. Set aside for 2 minutes to cool slightly, then sprinkle with chopped chives before serving.
