Ingredients List

  1. Fresh seafood marinara mix (prawns, calamari, fish) – approx. 600g
  2. 1 tbsp olive oil
  3. 2 garlic cloves, crushed
  4. ¼ cup dry white wine (optional)
  5. 1 tbsp fresh dill, chopped
  6. 250g lasagne sheets (fresh or dried)
  7. 1½ cups marinara (tomato-based) sauce
  8. 1 cup béchamel sauce
  9. 1 cup grated mozzarella cheese
  10. ¼ cup grated Parmesan cheese
  11. Salt and pepper, to taste
  12. Chopped parsley, for garnish (optional)

Steps

  1. Heat the olive oil in a frypan over medium-high heat. Add the crushed garlic and cook for 1 minute. Add the seafood marinara and toss over high heat for 3-4 minutes until just cooked. Stir in the white wine and dill, cooking for an additional minute. Remove from heat and season with salt and pepper.
  2. Bring a large pot of water to a boil. Blanch the spinach for 1 minute, then remove and refresh in cold water. Cook the lasagne sheets in batches over high heat for 2-3 minutes or until al dente. Drain and lay the sheets on a baking tray.
  3. In a small bowl, mix the low-fat mayonnaise and lemon rind. To serve, lay a sheet of pasta on each serving plate. Layer with the marinara mixture, followed by the blanched spinach, and top with another sheet of pasta. Finish with a dollop of mayonnaise, extra dill, and freshly ground black pepper.
