Ingredients

  1. 400g Paradise Prawns, peeled and deveined
  2. 2 tbsp olive oil
  3. 2 garlic cloves, minced
  4. Juice of 1 lemon
  5. 2 tbsp fresh parsley, chopped
  6. 2 tbsp fresh basil, chopped
  7. 1 tsp dried oregano
  8. 1 tsp smoked paprika
  9. Salt and pepper, to taste
  10. Lemon wedges, for serving

Method

  1. Peel and devein the Paradise Prawns, then rinse under cold water and pat dry with a paper towel. Set aside.
  2. In a small bowl, mix the olive oil, minced garlic, lemon juice, chopped parsley, chopped basil, oregano, smoked paprika, salt, and pepper to create the herb marinade.
  3. Add the prawns to the marinade and toss to coat evenly. Cover the bowl and refrigerate for 30 minutes to allow the flavours to infuse.
  4. If using skewers, thread the prawns onto them, ensuring they are spaced evenly for even grilling.
  5. Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  6. Grill the prawns for 2-3 minutes per side, or until they turn pink and are cooked through. Avoid overcooking to keep them tender and juicy.
  7. Remove the prawns from the grill and transfer to a serving platter. Serve with fresh lemon wedges on the side for extra flavour.

Chef's Tip

For beautifully grilled Paradise Prawns, allow the herb marinade enough time to infuse the seafood without marinating too long, as the lemon juice can start to break down the delicate texture. Grill the prawns over high heat for only a few minutes per side so they develop light smoky char marks while staying tender and juicy inside. The combination of fresh herbs, garlic, and citrus enhances the natural sweetness of the prawns, making this dish best served straight from the grill with extra lemon squeezed over the top.
