Ingredients List

  1. 400g Paradise Prawns, peeled and deveined
  2. 2 tbsp olive oil
  3. 2 garlic cloves, minced
  4. Juice of 1 lemon
  5. 2 tbsp fresh parsley, chopped
  6. 2 tbsp fresh basil, chopped
  7. 1 tsp dried oregano
  8. 1 tsp smoked paprika
  9. Salt and pepper, to taste
  10. Lemon wedges, for serving

Steps

  1. Peel and devein the Paradise Prawns, then rinse under cold water and pat dry with a paper towel. Set aside.
  2. In a small bowl, mix the olive oil, minced garlic, lemon juice, chopped parsley, chopped basil, oregano, smoked paprika, salt, and pepper to create the herb marinade.
  3. Add the prawns to the marinade and toss to coat evenly. Cover the bowl and refrigerate for 30 minutes to allow the flavours to infuse.
  4. If using skewers, thread the prawns onto them, ensuring they are spaced evenly for even grilling.
  5. Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
