Ingredients

  1. 600g flathead portions
  2. 250g cherry tomatoes, halved
  3. 2 teaspoons olive oil
  4. 2 garlic cloves, finely chopped
  5. 1 tablespoon balsamic vinegar
  6. Salt and pepper, to taste
  7. ¼ cup fresh basil leaves, torn
  8. Lemon wedges, to serve

Method

  1. Heat 2 teaspoons of oil in a pan over medium heat. Cook garlic, stirring, for 1-2 minutes until softened. Add tomatoes and balsamic, season, then cover and cook over low heat for 3-4 minutes until tomatoes
