Ingredients List

  1. 1 tablespoon butter
  2. 100g bacon, diced
  3. 1 medium onion, finely chopped
  4. 2 medium potatoes, peeled and diced
  5. 1 tablespoon plain flour
  6. Salt
  7. Black pepper
  8. 3 cups chicken or vegetable stock
  9. 200g Blue Swimmer Crab meat
  10. 1 cup chopped kale
  11. 1 cup mixed vegetables (e.g. corn, carrot, peas)

Steps

  1. Melt butter in a large saucepan over medium heat. Add bacon and cook for 2 minutes until it starts to crisp. Stir in onion and potato, cooking for another few minutes until softened and lightly golden.
  2. Sprinkle over the flour and stir to coat everything well. Cook for 1 minute, allowing the flour to absorb the butter and thicken slightly. Season with salt and pepper.
  3. Gradually pour in the stock, stirring as you go. Bring to a gentle boil, then reduce heat and simmer for 3–4 minutes until the potato is just tender.
  4. Add the Blue Swimmer Crab meat, kale, and vegetable mix to the pan. Stir gently and cook for 2 minutes or until everything is heated through.
  5. Taste and adjust seasoning if needed. Ladle the chowder into warm bowls and serve immediately.
