- 1 tablespoon butter
- 100g bacon, diced
- 1 medium onion, finely chopped
- 2 medium potatoes, peeled and diced
- 1 tablespoon plain flour
- Salt
- Black pepper
- 3 cups chicken or vegetable stock
- 200g Blue Swimmer Crab meat
- 1 cup chopped kale
- 1 cup mixed vegetables (e.g. corn, carrot, peas)
Steps
- Melt butter in a large saucepan over medium heat. Add bacon and cook for 2 minutes until it starts to crisp. Stir in onion and potato, cooking for another few minutes until softened and lightly golden.
