Ingredients

  1. 1 tablespoon vegetable oil
  2. 1 onion, finely chopped
  3. 2 tablespoons red curry paste
  4. 1 teaspoon mustard seeds
  5. 1 medium sweet potato, peeled and diced
  6. 400ml coconut milk
  7. ½ cup cold water
  8. 500g swordfish steaks, cut into chunks
  9. 100g green beans, trimmed and halved
  10. Juice of 1 lime
  11. Fresh coriander, chopped (for garnish)
  12. Steamed jasmine rice, to serve

Method

  1. Heat oil in a heavy-based saucepan over medium heat. Cook onion for 3 to 4 minutes or until soft. Add curry paste and mustard seeds. Cook, stirring, for 1 minute or until fragrant.
  2. Add sweet potato, coconut milk, and 1/2 cup cold water. Bring to the boil. Reduce heat to low. Simmer, covered, for 15 minutes or until sweet potato is just tender. Add fish and broccoli. Cover. Cook for 6 to 8 minutes or until fish is cooked through and broccoli is tender. Top with coriander. Serve with rice.

Chef's Tip

Swordfish is perfect for rich curries because its firm texture holds together beautifully while absorbing aromatic spices and coconut flavours. Add the fish towards the end of cooking and simmer gently so the swordfish stays tender and juicy in the center. Fresh lime and coriander at the finish help brighten the creamy curry and keep the dish balanced, fresh, and full of vibrant seafood flavour.
