Ingredients

  1. 200g King prawns, peeled and deveined
  2. 1 red chilli, finely chopped
  3. Juice and zest of 1 lime
  4. 1 tbsp olive oil
  5. 1 tsp ground cumin
  6. 1 tsp smoked paprika
  7. Salt and pepper, to taste
  8. 2 tbsp mayonnaise
  9. 1 tbsp chipotle sauce
  10. 1 clove garlic, minced
  11. Fresh coriander leaves, to garnish
  12. Lime wedges, to serve

Method

  1. In a bowl, combine the chopped red chilli, lime juice and zest, olive oil, ground cumin, smoked paprika, salt, and pepper. Mix well to create the marinade.
  2. Add the king prawns to the bowl and toss to coat them in the marinade. Cover and refrigerate for at least 15 minutes to allow the flavours to meld.
  3. While the prawns marinate, make the chipotle mayonnaise by mixing mayonnaise, chipotle sauce, and minced garlic in a small bowl. Stir well to combine.
  4. Heat a large pan over medium-high heat. Once hot, add the prawns and cook for 2-3 minutes on each side, or until they turn pink and are fully cooked through.
  5. Remove the prawns from the pan and arrange them on a serving plate. Drizzle the chipotle mayonnaise over the prawns.
